Pineapple Firni

Firni,the sweet,milky rice pudding is believed to come in India during the Mughal Empire. This dish is enjoying high status among sweet dushes. Firni basically traces it's root to the grain pottage of Middle East, particularly from ancient Persia,where short grain rice were called shola. Shola used to be cooked on 10th day of month or on the day of muharram. So it had an importance from a religious point of view also. This delicacy had evolved since the Mughal period and has been got it's various forms,like mango firni, rose firni, almond furni. Today i am sharing the recipe of pineapple firni.

Steps

Wash and soak the rice for 1 hour. Drain the water and spread the rice over a towel to make it dry.

Put the dried rice into the grinder and ground the rice into the coarsely powdered texture.

Boil the milk in a heavy bottom pan, till it reduces into half.

Meanwhile, take out one bowl milk from it. Bring this into warm temperature. Then add the milk powder into this and mix properly. Keep aside.

Now add the rice powder. Keep stirring, so that it shouldn’t stick at the bottom of the pan.

Now add the milk+milk powder mixture into the pan. Keep stirring. Add the cardamom powder. Mix it properly. Keep the flam into low.

When the rice would get boiled, then only add the milkmaid and. Keep the flame into low to medium. Stir and mix.

When you get proper consistency, turn off the flame. Add the crushed dry fruits and mix.

Keep this into room temperature. Take a bowl mix pineapple puree,pineapple essence and food colour together. Add this to the firni. Mix it.

Now put the pineapple firni into earthen pot and keep in freeze to cool.

Serve the cooled pineapple firni topped with crushed dry fruits. Enjoy!
