Firni, the sweet, milky rice pudding is believed to come in India during the Mughal Empire. This dish is enjoying high status among sweet dushes. Firni basically traces it's root to the grain pottage of Middle East, particularly from ancient Persia, where short grain rice were called shola. Shola used to be cooked on 10th day of month or on the day of muharram. So it had an importance from a religious point of view also. This delicacy had evolved since the Mughal period and has been got it's various forms, like mango firni, rose firni, almond furni. Today i am sharing the recipe of pineapple firni.
