Dhaaba style chanamasala

Dhaabas has always been in my goto list for dinners since my school days. They provide us with the exact north indian flavors and satisfy our food cravings with lip smacking menus. So,here goes my first dhaaba style recipe for our all time favorite,chanamasala.

Dhaabas has always been in my goto list for dinners since my school days. They provide us with the exact north indian flavors and satisfy our food cravings with lip smacking menus. So,here goes my first dhaaba style recipe for our all time favorite,chanamasala.
Steps

Add 2 tsp of ghee and 2 tsp of oil in a pan

Add the onions,cumin,fennel,bay leaves,cinnamon and clove and saute for 2 mins

Add curry leaves,ginger garlic paste and allow them to fry for 2 mins,and add chilli chilli powder,coriander powder and garam masala fry till the oil separates.

Add the coconut paste and tomato paste and fry them well and add the required amount of water allow them to boil. Take a handful of chanafrom the boiled chanaand coarse grind them and set aside.

Add required amount of salt and 1 tsp of sugar and add the grinded white chanainto the pan and mix them well and add the boiled channa.

Close the lid and allow them to reduce to half.

Add a tsp of lemon juice and kasuri methi and give a good mix switch off the stove.

Temper one greenchilli in ghee and add that into the chanamasala
- 9
Garnish with coriander leaves and serve hot with rotis or parathas
