Ingredients

  • 5 kggreen olives
  • 2lemons - juiced
  • 5fresh green chilli peppers
  • 5lemon leaves (optional)
  • 1/2 cupwild thyme (optional)
  • fennels (optional)
  • salt and water (2 tbs of corse salt for every cup of water)
  • 1 tspcitric acid (optional)
  • 2 tbsolive oil
  • 1 jarmade of glass

Steps

  1. 1

    Wash the olives

  2. 2

    On a piece of clean cloth start cracking the olives using a heavy mallet or the garlic crusher so as the olives spilt open

  3. 3

    Leave the olives in water for 2-3 days, while changing the water daily

  4. 4

    Drain the olives and put them in the jar with the lemon, the chilli peppers, the thyme and the fennels

  5. 5

    Add the citric acid

  6. 6

    Add the olive oil on top, firmly close the jar

  7. 7

    Keep the olive jar in a cold dry place

  8. 8
