This is my favorite dish to order regularly. If you can get fresh oysters, it will taste amazing. Enjoy it with chili sauce for the best experience!

Mix the tapioca starch with water in a bowl. Add the oysters, oyster sauce, light soy sauce, sugar, and ground black pepper. Stir well and set aside.

Heat a pan over medium heat and add the vegetable oil. Add the minced garlic and sauté until fragrant. Crack the eggs into the pan and scramble them. Add the bean sprouts. Stir the starch mixture again to make sure it’s smooth, then pour it into the pan.

Cook, stirring, until the starch and oysters are cooked through (the starch will turn clear and sticky when done). Sprinkle with chopped green onions and cilantro, and a little ground black pepper. Serve on a plate or bring the pan to the table and enjoy hot.
