Stuffed vegetable Omlette

I consider this as a complete nutrition platter.
It has got the protein from eggs, carbs from bread and minerals and vitamins from the colorful veggies.
Don’t cook the vegetables all the way, Keep them a little crunchy. You may add in a slice or two of cheese to make it a cheesy vegetable Omelet.
Enjoy with your favorite breakfast beverage for an energetic start to your day.

Steps

Prep 20 mins cooking 20 mins
  1. 1

    For the Vegetable stuffing
    1. Heat oil in a pan. Add the onions and sauté for 2-3 minutes.
    2. Now add 1 cup of mixed vegetable, salt and pepper. Cook for 1 minute.
    3. Now cover the pan and the vegetables sweat for 2-3 minutes.
    4. Remove from flame, add the spinach. Mix well and cover.
    5. Keep it aside.

  2. 2

    For the Omelette
    1. Beat the eggs in a bowl, add salt and pepper to it. You may also add some dried or fresh herbs as per your choice. For me a dash of mixed Italian herbs always comes handy.
    2. Heat the skillet and grease it with oil, wipe away the excess with a tissue.
    3. Spread the egg mixture on the hot skillet and cover the skillet.
    4. Let the eggs cook for 2 minutes, now remove the cover.
    5. Release the omelet form the bottom of the skillet using a flat spatula.

  3. 3

    6. Spread the vegetable mixture on one half of the omelet, and fold the other half on top of it.
    7. If using cheese place the cheese slices on one half and the cover it with vegetables and fold.
    8. Cover and cook for 20-30 seconds.
    9. Remove on a platter and serve with your choice of toast.

Hi, I am Swati.Food has always been my eternal love.I had always been a foodie. So much so that one of my aunts used to say it’s a pleasure to serve you. I also started cooking at a very young age in my mother’s kitchen. As I grew, my love for food grew with me. However, I did not even realize when this passion of mine became comfortable in some corner of my heart and the race towards economic and social goals took over my entire time.I am a Human Resource executive in the Education Industry by profession. Now, after years of juggling between my work and my passion, I finally decided to take my passion to another level. Here will share with you my recipes some tradition and some noval. My blog/website: ediblelovebyswati.comInstagram: ediblelovebyswatiFacebook: ediblelovebyswati
