Steps

Hard boil 4 eggs for 15 minutes. Set aside to cool, then peel and chop.

Cook rice as per packet instructions. Set aside.

Mix together eggs, cheese, parsley (if using) and seasoning. Add any veggies or cooked meats you would like and mix lightly to combine. Set aside.

Melt butter in a saucepan over a low heat.

Add flour to pan and gradually add milk a tiny bit at a time. Stir constantly. Once all milk is added, bring to the boil. As sauce starts to thicken reduce heat to a low simmer for 2 minutes.

Add some sauce to a baking dish. Layer veggie cheesy egg mix, then rice, then sauce and repeat. Finish with a layer of sauce.

Bake for 30 minutes in a preheated oven at 180C or until lightly browned on top.
