Suji Uttapam
Steps

Add suji and gram flour in a mixing bowl. Add curd and salt. Mix well. Now add water slowly stirring the mixture to a desired consistency. Rest for 15 minutes. After 15 minutes add sachet of eno and 1 tb spoon water and mix in one direction. Adjust the consistency of batter if required.

Wash and Chop all vegetables in small pieces. Sprinkle salt and chilli flakes on vegetables. Keep ready this topping.

Heat a non stick griddle and put few drops of cooking Oil and put one ladle full of mixture and spread with the help of spetula evenly. Place vegetables topping over it and press with spetula. Add few drops of cooking Oil and let it cook for 2 minutes. Flip the side and roast from other side also till golden. Flip again.

Likewise make all the uttapam.

Serve hot with Tomato chutney or sambhar.
