Beat the eggs in a bowl. Cut the spam into thin strips. Chop the green onions. Heat a skillet over the stove and lightly brush with oil. Press one rice paper sheet flat onto the skillet so it doesn’t curl up. Spoon some beaten egg onto the rice paper and spread it evenly with a spoon. Add spam, dried shrimp, and green onions to one side of the rice paper. When folding the rice paper in half, add mayonnaise and chili sauce.

Once the rice paper is cooked, place it on a rack to cool completely before transferring to a plate. Enjoy it cool—the rice paper will stay crispy.
