Beetroot Halwa:-

On a medium flame, cook the beetroot for 5-6 min. So that the beetroot is slightly cooked and become soft.

Now add milk,bring the whole mixture to a boil and then simmer.Keep on stirring at intervals.

The grated beetroots will cook in the milk and the milk will start to reduce and evaporate.

When the milk has 75% to 80% reduced, add rest of ghee, sugar and milkmaid to the halwa mixture.

Towards the end, add the cashews, almond, cardamom powder and raisins (if using) and simmer till all the milk is evaporated.

Your beetroot halwa is ready.

Beetroot Shrikhand:-

Take the hung curd in a bowl.

Using a whisker whisk the curd till smooth consistency

Add powdered sugar. Lightly stir with a spatula or spoon.

Add green cardamom powder and vanilla essence to the shrikhand mixture and mix well.

Add beetroot juice and mix so that you can get a beautiful colours of shrikhand.

Your beetroot shrikhand is ready.

Serve the halwa with shrikhand.
