Homemade and pure bliss! That is what I call these lovely looking goodies. The other day when I bought Spring Onions from the bhaji wala in my lane, I quickly had thought of making these Samosas for Iftaar. This is one more variation added to the list of Samosas that I have made until now. And this time I made these for all my immediate neighbours as a gesture of good will and best wishes for the festive season. Spring Onions give it a lovely flavour and texture. Flaky and crusty, these are a must have snack on any given day. Serving them with Shaam ki Chai has a charm of it's own. With this recipe, you can make about 32 Samosas and can very well double up according to the need. Sharing is the essence of this festive season. Especially with the less fortunate ones.

Ingredients

40 minutes
12-14 servings
  • 3 cupsAll purpose flour or Maida
  • 1 tspSalt
  • 1 tspCumin Seeds
  • 1 tspBlack Seeds or Kalonji
  • 1 tbspOil
  • 1/4 cupMilk
  • Water as required
  • FOR THE FILLING -
  • 10Potatoes medium sized
  • 1Red Onion finely chopped
  • 2 stalksSpring Onions
  • 1 tspSalt
  • 1 tbspDry Mango powder or Amchur
  • 1 tbspRed chilli powder
  • 1/2 tspTurmeric powder
  • 1/8 tspAsafoetida or Hing
  • 1 tbspCoriander Seeds partially crushed
  • 1 tbspGinger grated
  • 1 tspGarlic mince
  • 1 tspGaram masala
  • 3-4Green Chillies finely chopped
  • 1/4 cupCoriander Leaves finely chopped
  • 2 tbspOil
  • 2 SprigsCurry Leaves torn into pieces

Steps

40 minutes

    Make a smooth yet firm dough with all the ingredients mentioned for the Samosas. Cover and set aside for a good 20 minutes.

    For the filling, heat Oil at first. Now add crushed Coriander seeds, Curry Leaves, Asafoetida, Green chillies and chopped Red Onion. Saute all of that on a low heat until the raw smell fades away and the Onions are nicely sauteed. Now add the powdered spices and the boiled and the chopped Spring Onions. Mix well. Cook for a minute or more. And then finally garnish with chopped Coriander Leaves, Chat masala and Garam masala both.

    Now add the boiled and mashed Potatoes to it. Give it all a good mix. There is no need to cook much. Leave it on covered on a low heat for just 2 more minutes and then take it off the heat. Set aside until you roll out Samosas.

    Divide the dough into equal sized balls and roll out a medium thick disc out of each ball. Cut into two and make Samosas by stuffing in about 2 tablespoons of the Potato Spring Onions mix. Seal the edges properly by pinching them. Deep fry on a low to medium-high heat in hot Oil. Never do that on a high heat.

    After done with all, it's time to serve these tempting homemade yummy Samosas with Green Chutney at Iftaar. You can serve them with any other Chutney of your choice if desired. Happy Iftaar Time!
