For dough: In a mixing bowl mix maida, sugar baking powder, baking soda, a pinch salt, butter/refined oil, curd, vanilla essence and make a smooth dough. Cover it with a cloth and keep aside for 2 hours till the dough has risen and double in size.

After 2 hours we can see the dough has risen and air pockets is developed. Once agai again knead the dough smoothly with out removing air pockets.

Roll the dough slightly thick. And with the help of cookie cutter cut it into donuts shape. Meanwhile, heat oil in a wok and when the oil is hot enough deep fry donuts carefully on the slow-medium flame. Deep fry in small batches. Gently flip the side sides and fry again till golden.

Transfer the donuts on kitchen towel gently. Ready to serve.
