Steps

In kadaai, heat 2 tbsp of oil then add cumin seeds and hing.

Add onions, saute them till they change the colour.

Then add green chillies, ginger garlic paste and stir constantly.

Now add tomatoes. Cook them till they become mushy.

Add red chilli powder, coriander powder, garam masala and salt and mix.

Now add in roasted and mashed baigan. Mix and mash until it becomes well combined.

Sprinkle some chopped coriander leaves. Baigan ka bartha is ready.
