Ingredients

30 minutes
Serves 6 servings
  • 2eggs per person
  • 6tender nopales (cactus paddles)
  • 7 ozchorizo (about 200 grams)
  • 1/3onion, finely chopped
  • 3 tablespoonsvegetable oil (about 45 ml)
  • Red salsa, to taste
  • Salt, to taste

Steps

30 minutes
  1. 1

    Start by cleaning and chopping the nopales. Place them in a hot skillet without water over low heat and cook until they are dry and tender.

  2. 2

    In a skillet, heat the oil, add the onion, then add the chorizo, crumbling it well. Fry thoroughly. Add the nopales, mix, and sauté.

    Beat the eggs in a bowl, add salt, and pour into the skillet. Stir with a wooden spoon until the eggs are set.

    Serve with red salsa, refried beans, and warm tortillas.
