Cauliflower fried rice
Healthy fried rice!! That actually tastes good!!
Steps

Combine 1 teaspoon sesame oil with eggs. Whisk. Set aside.

Chop cauliflower into chunks and grate in box grater.

Heat remaining 1 tablespoon of sesame oil in large skillet in high heat. Add cauliflower, green onions and frozen mixed veggies. Stir fry 3-4 minutes until cauliflower is starting to get tender.

Add garlic, salt and pepper. Cook for another minute.

Push mixture to sides to create a bowel shape in middle of pan. Add egg mixture. Scramble eggs and when done mix together with other ingredients in pan.

Add soy sauce and toss together. Serve warm! 💗
