Trim banana skins by removing the ends. Carefully scrape away some of the white pith and discard. Cover in turmeric and set aside to marinate. Can be prepared in advance.

Fry ginger, curry leaves and spices for a few minutes to release aromas.1

Slice onion and pepper and add to pan.

Slice banana skins and add to pan along with desicated coconut. Squeeze juice of 1/2 lemon over dish.

Pour over water. Allow to simmer for 15 minutes.

Serve with rice.
