Ingredients

  1. 2eggplants
  2. Flour for coating
  3. Salt, to taste
  4. Preferably cane honey (or molasses)
  5. Sesame seeds

    Cut the eggplants into your preferred shape. I used two different cuts.

    Salt the eggplants. In a freezer bag, add the flour with a little more salt and one type of cut eggplant. Shake vigorously until the eggplant is well coated with flour. Fry in a saucepan with enough oil. It's best to fry in batches to keep the oil temperature steady.

    Otherwise, the eggplant will absorb too much oil and become heavy. When fried, remove excess oil with paper towels and fry the other cut of eggplant.

    For the sliced eggplant, I also added sesame seeds. If you have poppy seeds, they work great too. Finish with honey and enjoy! 🥳
