Ingredients

4 servings
  1. 4Eggplant
  2. 150 grams● Chicken thigh or ground chicken thigh
  3. 1 tsp● Grated ginger
  4. 1/3● Japanese leek (finely chopped)
  5. 1/2 tsp● Salt
  6. 1 tspKatakuriko
  7. 1Green onions (finely sliced)
  8. 1Oil
  9. 1Ponzu

Cooking Instructions

    Cut the eggplant in half lengthwise and make a slit from the middle of the thick bottom to just below the stem. Remove the skin from the chicken and mince with a food processor.

    In a bowl, add the ingredients marked with ● and knead. Add the katakuriko and knead well.

  3. 3

    Using a tea strainer, sprinkle katakuriko inside the eggplant and put the filling of Step 2 in between. Deep fry slowly over medium heat until cooked through.

    Transfer to a serving dish and sprinkle green onions. Serve with ponzu.

    Pork Fillet Cutlets.
