Chicken Massaman Curry

Prepare the ingredients. Cut the potatoes and onions into your preferred size.

Pour half of the coconut milk into a pan and heat over medium heat until the oil separates. Add the Massaman curry paste and stir until well combined.

Add the chicken to the pan. Cook until the chicken firms up slightly, then season to taste with fish sauce and coconut sugar. Taste and adjust as you like.

Add the potatoes and onions to the pan and stir to coat with the curry paste. After a few minutes, add the remaining coconut milk and water.

Simmer for about 20-25 minutes. Add the peanuts at the 15-minute mark, or leave them out if you prefer. (You can use any roasted peanuts you have on hand.)

Once done, serve the curry and garnish with sliced red chili peppers. Enjoy the delicious flavor!
