Ashura is a holiday celebrated annually in Turkey. It signifies many events for Muslims, among the most significant being the day Noah's Ark set on dry land. . In Turkey, a traditional dish is prepared during this month known as Noah’s pudding/ " Aşure " It is
meant to symbolize the celebratory meal Noah made when he came off the Ark. It is a sign of peace, of community and sign
of a bright future. (There is a religious fact too,but I won't get in to that in here,Cookpad ).

Ingredients

8 servings
  • 1 cupbarley (soak overnight)
  • 1/2fave beans,canned(or any white beans)
  • 1/2chick beans,canned
  • 1cinnamon stick
  • 6-7cloves
  • 10dry apricot
  • 1/3 cupraisins
  • 7dry figs
  • 1apple
  • 1 1/2 cupsugar (if you like more sweet add more)
  • 1 pinchsalt
  • 6chestnuts/toasted (optional)
  • To garnish :
  • 1/2 cuppomegranate seeds
  • 1 tspcinnamon
  • 2-3dry apricots
  • 1 tbspcrushed walnuts

Steps

  1. 1

    Drain and Transfer the barley to a large, deep pan and bring to boil. add cloves and cinnamon stick.Reduce the heat and simmer for about 35 minutes, or until the barley is tender, topping up with the water during the cooking time if necessary.

    Cut figs,apricots into small pieces,place all the dried fruit in separate bowls and cover with boiling water. Leave to soak for 10 minutes, then drain.peel and cut apple,into small cubes.

    Barley cooked,drain and rinse peas and beans,add into barley.add drained raisins,and apricots,add figs with their juices.stir.

    Add apples and sugar.keep stirring,about 5 minutes.turn the heat off.Transfer the mixture to a large mixing bowl. leave the pudding to cool..

    Sprinkle the cinnamon over the pudding and arrange the sliced dried figs, apricots, sultanas and walnuts over the top

    Sprinkle pomegranate seeds over generously.

    Little note: make sure you have enough water with barley.because when pudding is cooled,water will shrink,you do not want to eat dry pudding right?

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
