Steps

Gather your ingredients and roughly chop them.

Put the tomatoes,onions, ginger, garlic, chilli peppers, carrots and salt in a blender and blend

Heat oil in a pan or cooking pot. Pour the blended mix in the pan and let cook for 4-5 minutes.

Uncover, stir, reduce heat, and let simmer for 15-30 min or until it reduces by half.

Add in the lime/tamarind juice and tomato paste, stir to mix well and cook for 3-5 minutes.

Serve and enjoy. Store leftover chutney in a jar in the refrigerator for two weeks.
