Looking to incorporate more veggies and less processed food into my family's diet.

Ingredients

  1. 1medium sized spaghetti squash
  2. Olive oil
  3. 1medium onion, minced
  4. 1 Tablespoonminced garlic
  5. 1 poundlean ground beef or turkey
  6. 1/2 poundbaby kale
  7. 24 ozjar pasta sauce
  8. 2 cupsmozzarella cheese

Cooking Instructions

    Slice squash lengthwise and scrape out seeds.

    Coat with olive oil and place in baking dish. Bake 375° for about an hour, or until fork easily punctures the flesh.

    While squash cooks, add Olive oil to a large skillet and sautè onion, garlic and beef.

    When beef is no longer pink, add kale and wilt. Turn off heat.

  5. 5

    When squash is cooked and cool enough to handle, use fork and scrape out flesh.

    Add squash and sauce to mixture in skillet and toss.

  7. 7

    Put mixture back into squash shells and top with cheese.

  8. 8

    Bake 375° for about 30 minutes or until cheese is melted.

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.

Really good. Added more seasoning like rosemary, sage and thyme.
