Kaipola/Banana Cake

This is a very famous authentic dish of Malabar region of Kerala. This dish is a sweet combination of banana and egg. It is very popular and especially among the Muslim community and is relished during iftar parties. It is also eaten as a breakfast and an evening snack too. The best part is that it can be made with very few ingredients and also very quickly. Therefore this is the most loved dish. Ripe bananas when fried tastes exceptionally superb. This dish is not only yummy but nutritious too. Try this recipe whenever you want to give your taste buds an extraordinary experience of an extraordinary dish. I made it in a round as well as square pan for the two different shaped pieces of Kaipola.

Whisk Eggs with Sugar and Cardamom powder. Set aside.

In a non stick pan, heat Ghee and fry the Cashews and the Raisins. In the same pan, fry the sliced bananas for 2-3 minutes. Heat should be low. Wait until it cools down a bit.

Now add in the Eggs and mix well. Cover and cook on a low heat until done. It is ready in 15 -20 minutes. This can be baked too on 180° for 20-25 minutes. But i tried the slow cook method. This gives an authentic taste and flavour to the dish.
