Ingredients

Makes about 1 l

1.5 lwater
200 gginger, washed and sliced
1/4 cupraw wildflower honey
1/2 cuplemon juice (depends on lemon size but 2-3 on average)

Steps

Bruise the ginger. Put in a pot with the water. Bring to boil and simmer gently for about 2 hours. Skim any sediment that forms on the surface.

Take off the heat and strain. Add the lemon and honey to serve. (Add more water or more honey if too ginger-y for you!)
