Ingredients

2-3 curries
  • 2onions chopped (red onions preferred)
  • 1 tinchopped tomato
  • 2 tspRed chilli powder (more or less depending on your taste)
  • 2 tspCurry powder (more or less depending on your taste)
  • 1 tspGround cumin seeds powder (more or less depending on your taste)
  • 1/2 tspGaram masala powder (more or less depending on your taste)
  • 1 tspTurmeric powder (also known as Haldi powder)
  • 1 tspGinger and garlic paste (more or less depending on your taste)
  • Oil
  • Salt

Steps

  1. 1

    Heat oil in a pan. Now, on a medium heat (4), add your chopped onions and heat them for 2 mins (do not let them turn black).

    Now add ginger and garlic paste and heat for a further 1 minute turning using a spatula simultaneously.

  3. 3

    Now add red chilli powder, curry powder, turmeric powder, ground cumin, garam masala powder and add salt to taste. Now mix it perfectly and cook it for approx. 5 min turning it simultaneously. Add some oil if it looks dry.

    In order to see if its cooking perfectly, a little oil should emerge from the sides. Once this shows, add your tinned chopped tomatoes into the pan and mash the tomato pieces using the spatula.

    Now mix it and let it cook on a medium heat until oil emerges from the sides (approx. 5-7 mins). Turn occasionally.

  6. 6

    Your basic curry masala is now prepared. You can now store it in your refrigerator for upto 15 days.

    To cook curries, you just need a spatula size of the masala.

  8. 8

    Add your masala, cook it on the pan on high heat for 2 mins. Then add some water to it, mix it well and let it cook on a medium flame. You can stop it whenever you want depending on how much curry you want.

  9. 9

    Just after mixing the masala with the water :
    To make it Vegan, you can add any veggies
    To make it vegetarian, you can add veggies or Paneer (Hard indian Cottage cheese- Available at every supermarket).
    To make it Non vegetarian you can add cooked chicken or any other meat.

  10. 10

    This curry can be eaten with rice, Naan, Chapati or even Parathas.
