Ingredients

  1. 4 cupsbread flour (about 500 grams)
  2. 1 teaspoonsalt (about 6 grams)
  3. 1/3 cupgranulated sugar (about 80 grams)
  4. 1/4 cupsweetened condensed milk (about 65 grams)
  5. 5 tablespoonsunsalted butter, cut into small cubes (about 70 grams)
  6. 1 1/2 cupsevaporated milk (about 350 grams)
  7. 2 teaspoonsinstant yeast (about 6 grams)
  8. 1 tablespoonchia seeds
  9. 1/2 cupgreen raisins
  10. [For decoration]
  11. 1large egg

    Gather all ingredients. Weigh each ingredient and cut the butter into small cubes.

    Prepare the green raisins and chia seeds and set aside.

    Mix the condensed milk, sugar, and evaporated milk together until well combined.

    In a large bowl, add all the dry ingredients except for the butter and salt.

    Pour the liquid mixture from step 3 into the dry ingredients. Stir until a shaggy dough forms, then start kneading to form a dough.

    Add the butter to the dough and knead until the dough is smooth and elastic.

    Knead in the reserved green raisins, chia seeds, and salt until evenly incorporated.

    Cover the dough with plastic wrap and let it rise at room temperature (about 80°F/27°C) for about 1 hour.

    When the dough has doubled in size, poke a hole in it with a floured finger. If the hole doesn't spring back, it's ready.

    This dough is rich in sugar and milk, making it very moist. Dust your hands with flour, gently pat the dough to release air, and shape it into a large round. Use a dough scraper to divide the dough into 16-18 equal pieces. Reserve a small piece of dough to color for the grape leaf.

    Roll each small piece of dough into a smooth ball using your palms.

    Line a baking sheet with parchment paper. Arrange the dough balls evenly to form a grape cluster shape. Cover with plastic wrap or a damp towel.

    Take the reserved small piece of dough and knead in 1 teaspoon matcha powder to make green dough for the grape stem, tendrils, and leaf.

    Shape the grape leaf, stem, and tendrils and attach them to the appropriate spots on the cluster.

    Cover the shaped dough with a damp towel and let it rise at room temperature for about 50 minutes, until the dough is about 1.5 times its original size (second rise).

    Preheat the oven to 360°F (180°C). Brush the surface of the dough gently with beaten egg.

    Place the dough in the preheated oven and bake for 20 minutes. Then reduce the temperature to 320°F (160°C) and bake for another 10 minutes, or until the bread is golden brown and cooked through.

    Transfer the baked bread to a wire rack to cool.

    * Evaporated milk gives a richer flavor, but you can substitute with whole milk if preferred.
    * For extra flavor, brush the bread with honey water after baking.
