Pain Perdu

I made this recipe on Instagram more than a year ago. I still have some leftover stale bread, so I thought why not show you lovely people a very simple recipe which is my go-to brunch. Pain Perdu in French literally translates to The Lost Bread. It is also a fancy name for French toast. I had seen countless recipes that use rich eggy bread like brioche or challah. I also saw countless recipes that complicate the whole process.

That is not the case. Perhaps French toast really suffers lots of misconceptions. It is just stale bread which is dipped in egg and milk, pan fried to crispiness while still maintaining that soft interior. That simple pan frying will allow the stale bread to lose its hardness and wake up into an edible bread again. Hence, the name, The Lost Bread.

There is also not a need for massive icing sugar or syrup, just a pinch of granulated (I am using demerara) sugar will do the trick. It will give the bread an extra texture. As for the omelette, it happened 1 morning when I was making pain perdu for my daughters. I didn't wanna waste the batter, so I thought why not make an omelette outta it. And voila, this dish is born. In closing, I hope you will give this simple recipe a try.

Ingredients

2 servings
  • 4Eggs,
  • PinchSea Salt,
  • 150 gWhole Milk,
  • 1 TSPPure Vanilla Paste,
  • 3 TBSPUnsalted Butter,
  • 6 SlicesStale Bread,
  • PinchDemerara Sugar,

Steps

    In a shallow bowl, whisk together eggs and salt.

    In another bowl, whisk together milk, vanilla and a pinch of salt.

    Melt butter in a skillet over medium low heat.

    Dip the bread into the milk mixture, into the egg mixture and finally into the skillet.

    Cook until the bottom is crisp brown.

    Flip, tilt the skillet and baste the bread with all the liquid.

    Cook until the bottom is crisp brown.

    Remove from heat and repeat the process for the remaining bread.

    If you have eggs and milk left, mix them together and cook the mixture in the same skillet.

    Transfer onto serving plate.

    Sprinkle some sugar over the top.

    Serve immediately.
