Quick Fix Dinner. Bakery Kulcha is made from maida flour, water, a pinch of salt and a leavening agent (yeast or old kulcha dough), mixed together by hand to make a very tight dough. This dough is covered with a wet cloth and left to stand for an hour or so in a warm place. The result is a slight leavening of the flour but not much. The flour is pummelled again by hand and then rolled out using a rolling pin into a flat, round shape. It is baked in an earthen clay oven ("tandoor") until done. When baked, it is often brushed with butter or ghee, although this is not necessary. It is then eaten with any Indian curry. Ingredients

  • 1 cupChickpeas
  • 1 lOnion arge sized chopped
  • 2 lTomatoes arge sized chopped
  • 2 tbspCholey Masala
  • 1/2 tspGaram Masala
  • Assorted Spices
  • to tastePickle
  • Bakery made Kulchey
  • 1 tspBaking Soda
  • to tasteSalt

Steps

10-15 minutes
  1. 1

    Take one cup chickpeas. Soak in water for overnight.

    Boil chickpeas after 10-12 hours. Add Salt and Baking Soda.

    Prepare gravy. Shallow Fry chopped Onion. Add coriander powder and cumin seeds.

    Add Kashmiri Lal Mirch and homemade Choley Masala preferably.

    Add water to avoid burning of mixture of spices. Add boiled chickpeas.

    Stir properly. Mash chickpeas into half.

    Cook for 10-15 minutes till garvy thickens.

    Cook Bakery made Kulchey by applying Salted Butter or Desi Ghee.

    Serve HOT. Sprinkle Chopped Green Coriander Leaves on Choley. Serve with grated radish, onion rings, mango- Chilli pickle and green chilli.
