Ingredients

1 day
25 pieces
  1. 1 kgparwal (around 24-25) peeled, slit & de-seeded
  2. 700 gms. sugar
  3. 2 cupswater for sugar syrup
  4. 4 cupswater for boiling parwal
  5. 30 piecesalmonds soaked overnight
  6. 5 tbspgreen pistacchios soaked overnight
  7. 1/2 tspsaffron leaves crushed coarsely
  8. 25-30raisins
  9. 2 tspsugar

    In a big vessel, add parwal to the boiling water

  2. 2

    Cover with a lid & boil till first boil of water. Drain immediately

  3. 3

    In a kadai, boil 2 cups of water & add sugar for syrup

  4. 4

    Remove the scum for clean syrup

  5. 5

    Gently put the boiled parwal in the ready 1 thread syrup & let it cook on medium flame

  6. 6

    The parwals will rise in the syrup & gradually start settling down

  7. 7

    Now transfer the parwals with the syrup in a flat container

  8. 8

    Leave it open till it cools, then put in the fridge overnight

  9. 9

    Next day, take out the parwals from the syrup on a sieve to drain away the syrup

  10. 10

    Peel almonds, pistacchios & cut them finely into long strips

  11. 11

    Mix saffron into it well in advance to get the natural colour

  12. 12

    Add raisins, sugar & gently mix. Keep aside.

    Fill the parwals with this filling putting only 1 raisin in each

    Serve cold
