Ingredients

15 mins
3 - 4 people
  • 1medium sized onion
  • 3medium sized cloves of garlic
  • Handfulfresh picked garden herbs (rosemary, thyme & parsley)
  • Quarter cup of olive oil
  • 2 tablespoonsbutter
  • 400 gSnapper Fish cut into pieces half the size of your palm

Steps

15 mins
  1. 1

    Finely chop onion and garlic;

  2. 2

    Add oil and butter into medium sized non-stick pan and heat up on low flame on stove top (hob);

  3. 3

    Fry onion, garlic and herbs (infusing oil) till onions are just turning brown;

  4. 4

    Add fish to pan, turning them regularly, but still allowing them to turn brown from the frying;

  5. 5

    Do not overcook (5 - 7 mins max), because you want the fish supple but still flakey;

  6. 6

    Best served with steaming potatoes and a green salad.

  7. 7

    Note - preparation time = 15 minutes and Cooking time = 15 minutes.
