Ingredients

4 Servings
  • 1onion, sliced
  • 3garlic cloves, chopped
  • 4 cupsspinach
  • 2tomatoes, chopped
  • 1 tbspeach: mango chutney & chopped cilantro/mint
  • 1 tspeach: ginger paste & tomato paste
  • 2 tbspcurry powder
  • to tasteSalt,
  • 1/2 cancoconut milk
  • 1/4 cupcream
  • 1/2 cupwater/veg stock
  • 1potato, chopped

Steps

  1. 1

    Fry the onions & garlic in 1 tbsp of oil/butter.

  2. 2

    Add the chopped potato and let cook for 5 minutes.

  3. 3

    Add the tomatoes, sauces & spices, then let cook down for another 5 minutes.

  4. 4

    Finally, add the spinach, chopped herbs and liquids and mix. Then let flavors enhance by cooking for further 5 minutes,
