In Jakarta, we used cassava leaves for this type of curry, but we realized Kale has the same textures, and is easier to find here in UK. As usual, omit the chilli if you don't like spicy. This will taste nicer the day after. Originally this used salted fish (Teri)- which I used, this can be omit, as you can't find this here in UK.

Ingredients

3-4 people
  • 200 grKale (I dont use the stem) - cut small
  • 2,5shallot (UK type which is quite big) - peeled and cut
  • 3red chillies (optional)
  • 5Bird chillies (optional)
  • 4garlic - cut
  • 1 tspcoriander powder
  • 1/2 tspturmeric powder
  • 2-3candlenuts (optional) - grill and cut
  • 1/4 tspginger
  • 1lemongrass - used the white bit and slice
  • oil to stir fry
  • 1bay leaves
  • 1kaffir limes (optional) - dont use the stem, it can be bitter
  • 1 tspmince galangal
  • 2 tspsugar (lessen if you prefered)
  • 1 tspknorr chicken stock
  • 1 tspwhite pepper
  • 80 mlcoconut milk
  • 400 mlwater

Steps

    In a pan, boil water, add a pinch of salt (this is not in above list) and boil the kale. this should take about 5-8 minutes. try it and make sure it's a. bit soft. Drain and squeeze to make sure not water left. This will make about 1 palm of a hand. Set aside.

    Blends: shallots, garlic, galangal, ginger, chillies, bird chillies, lemongrass, till smooth.

    In a pan, heat some oil and fry the blends ingredients in medium to low heat. put the kaffir leaves, bay leaves and fry till it change it's colour (darken). This will take about 15-20 minutes.

    Add the water, then add the coconut milk. Add salt, white pepper, knorr and sugar. Taste it.

  5. 5

    Add the kale (and the salted fish if you used). cook for about 25 minutes. taste and add what neccesary. and it's done :)

Whether it's a spoonful of sugar or a handful of cabe (chillies), it can only make your food (or live) more exciting. The little Indonesian girl in me reminisces about the spicy flavors of home. Dishes such as Nasi goreng and rendang, transport me 7000 miles back to my home in Jakarta.Arriving in UK, I felt lost. Finding foods that I missed could be quite a challenge. That’s when my culinary journey started. It's far from perfect, and just a guide, use and make them your own. I hope it would help you, as it help me.
