Ingredients

2 servings
  • 1 1/2 cupsBasmati rice
  • 1/4 cupChopped Carrots
  • 1/4 cupChopped Beans
  • 1/4 cupCauliflower florets boiled in hot water for 5 mins
  • 1/4 cupPeas
  • 2 1/2 cupscoconut milk
  • 1Big Size Onion cut and thinly sliced lengthwise
  • 5Green Chillies slit
  • 1/2 TbspGinger garlic paste
  • 1/2 inchpiece Cinnamon
  • 2Cloves
  • 1Cardamom
  • 1Bay leaf
  • 1 TbspGhee
  • 2 TbspOil
  • as per taste Salt
  • leavesfew Coriander
  • leavesfew Mint

Steps

  1. 1

    Soak the Basmati rice for 15 mins.

  2. 2

    Keep the pressure cooker in stove. Switch on the flame.

  3. 3

    Add ghee and oil. Once it gets heat add Cinnamon,Cloves and Cardamom. Fry it.

  4. 4

    Add Onions and Green Chillies. Fry it until Onions becomes translucent.

  5. 5

    Add ginger garlic paste and fry it for a minute.

  6. 6

    Add the chopped vegetables and saute for 5 mins. Add mint leaves also. Mix well.

  7. 7

    Add coconut milk.You can also use 2nd and 3rd milk.Here we are using only coconut milk instead of water.

  8. 8

    Add the twice washed Basmati rice and add salt to it. Let it Boil.

  9. 9

    Cover the lid and leave it for 3 whistles.

  10. 10

    Open and garnish it with coriander leaves.

  11. 11

    Serve hot with onion raita.
