Steps

Soak the Basmati rice for 15 mins.

Keep the pressure cooker in stove. Switch on the flame.

Add ghee and oil. Once it gets heat add Cinnamon,Cloves and Cardamom. Fry it.

Add Onions and Green Chillies. Fry it until Onions becomes translucent.

Add ginger garlic paste and fry it for a minute.

Add the chopped vegetables and saute for 5 mins. Add mint leaves also. Mix well.

Add coconut milk.You can also use 2nd and 3rd milk.Here we are using only coconut milk instead of water.

Add the twice washed Basmati rice and add salt to it. Let it Boil.

Cover the lid and leave it for 3 whistles.

Open and garnish it with coriander leaves.

Serve hot with onion raita.
