Today I made three-flavor cookies: vanilla, cocoa, and matcha. These are perfect for an afternoon snack with tea or coffee, each with its own rich, fragrant taste.

Today I made three-flavor cookies: vanilla, cocoa, and matcha. These are perfect for an afternoon snack with tea or coffee, each with its own rich, fragrant taste.

For the vanilla flavor: Measure the butter, sugar, and egg whites into a bowl. Use a whisk to mix until smooth (make sure the butter is at room temperature so it’s soft). Once combined, gradually add the egg whites and mix well.

When the batter is smooth, transfer it to a piping bag and let it rest. Repeat the same process for the cocoa and matcha flavors. For cocoa, mix the cocoa powder with the butter and sugar.

For matcha, mix the matcha powder with the butter and sugar until well combined. Transfer all batters to piping bags, snip the tip, and pipe out your desired shapes. Press a few almonds onto each cookie.

Preheat the oven to 350°F (180°C). Bake the cookies for 15 minutes.

Let the cookies cool, then store them in an airtight container. Enjoy with coffee or hot tea.
