Fried Calzones

Hi everyone! Tonight at our house, it's calzone night. I don't think there's a more indulgent dish than this—a delicious pocket of dough filled with ham and mozzarella, fried in hot oil. Calzones are always a crowd-pleaser, the first to disappear at buffets, and they're easy to eat even when cold—if there are any left! It's hard to find someone who doesn't like them. They always make an impression. Tonight, I won everyone over!

Hi everyone! Tonight at our house, it's calzone night. I don't think there's a more indulgent dish than this—a delicious pocket of dough filled with ham and mozzarella, fried in hot oil. Calzones are always a crowd-pleaser, the first to disappear at buffets, and they're easy to eat even when cold—if there are any left! It's hard to find someone who doesn't like them. Start by making the dough: combine the flour and sugar in a bowl. Dissolve the yeast in the water, then add it to the flour along with the olive oil. Begin mixing. Add the salt and knead until you have a smooth, even dough. Cover with plastic wrap and let it rise until doubled in size.

After the first rise, divide the dough and shape it into balls. Keep in mind they will rise again, so size them according to how big you want your calzones. Let the balls rise again until doubled in size.

While the dough balls are rising, prepare the filling by rolling up slices of ham and mortadella with a generous piece of mozzarella inside each.

Once the dough balls have risen, it's time to fill the calzones. Take a ball, roll it out with a rolling pin, add the filling, and fold it over, pressing the edges well to seal.

Trim the edges with a pastry cutter to give them the classic half-moon shape. Once all the calzones are ready, fry them in hot oil for about 1–2 minutes per side, or until golden brown.

Drain on paper towels and enjoy them hot. They're also delicious cold the next day, if you have any left!
