Ingredients: Vegan feta (a traditional block or cubed or crumbled); Peppers (all or any colour); Tomatoes (any shapes and colours); 1 white onion; 1 red onion; 1 cucumber (cubed or moons); A few capers; 1 drizzle of good olive oil; Sea salt and cracked black pepper; Herbs - fresh or dried oregano, a sprig of thyme, mint, parsley, dill (a combination of two or three of these is nice, but it doesn’t matter which combination) 🌿; 1 splash red wine vinegar (add to half of the red onions to make a pink pickle)

Greek salad is one of my all time favourites. It works really well with vegan feta ( which I love when it’s dressed with herbs and good olive oil) but you can miss it or sub for tofu if you prefer. I have included loads of fresh green herbs from the garden.

A wedge of lemon
1 splashred wine vinegar (add to half of the red onions to make a pink pickle)

Wash and chop the salad vegetables. Remove seeds as to your preference.

Add the feta, drizzle with olive oil abs sprinkle with herbs and season to your taste.
