This recipe is full of flavour and full of delicious veggies too. It’s a great one pot dish too so perfect if you have friends for dinner. My little ones found this a tad spicy but enjoyed the crusty bread with it and lots of Parmesan. This recipe served a family of 4.

Ingredients

1 hour
2-4 people
  • 300 gBomba paella rice
  • 1white onion
  • 1red onion
  • 1 tbspnolive oil
  • 1 clovegarlic minded
  • 1yellow pepper
  • Halfa punnet cherry tomatoes halved
  • Halfa Sachet of saffron
  • 100 gNduja
  • 2chicken breasts (I used cooked but raw will do too just cook at same time as onions)
  • 900 mlchicken stock
  • Drizzle of honey if necessary
  • 1tspn tomato purée
  • Salt and pepper
  • Fresh parsley to serve

  1. 1

    Start by chopping your veggies into cubes and then fry in oil. Add the saffron, then the Nduja and break it up with the spoon. Then add the rice and keep stirring it in. Then add the stock and purée, and put the lid on and lead to simmer till the rice is nearly cooked, stirring occasionally and adding more stock if necessary. When nearly cooked add the cooked chicken, honey and season if necessary. Serve in the one pot and garnish with parsley.
