Heat up oil in the pan. Let the mustard seeds in. Allow them to break.

Cut the onion, ginger and keep them ready.

Add onions when the mustard finishes its show. Let onion turn its colour to brown.

Add water. Let it boil for 5 minutes. Add a pinch of salt.

Into the boiling water, add quinoa. Cook for 15 minutes.

After 15 minutes, add grated coconut, curry leaves and ginger. Mix them all well. Cover it with lid. Put it on low flame for 5 more minutes. Squeeze the lemon on top. Ready to serve.
