Ragi Panki is one of the healthy breakfast.It is a type of pancake, where the batter is cooked by putting it between banana or corn leaves. In Gujarati, “pan” means ‘leaf”. Variations in panki can be made by using different types of flour such as maize flour, semolina, gram flour or ragi flour. The taste of panki can be enhanced by adding coriander, spinach, dill leaves, fenugreek leaves or spring onion. This way you can try mixing different ingredients and make panki as per your taste.

Ingredients

30 minutes
2 servings
  • 1/2 cupRagi flour
  • 2 tspAtta
  • 1 tspchopped coriander leaves
  • 1/2 tspchopped ginger
  • as per tastesalt
  • 1/2 tspchopped chillies
  • 1 tsproasted cumin seeds
  • 2 tspoil for fry
  • 2pumpkin leaves
  • 1/2 cupwater

Steps

30 minutes
  1. 1

    Mix all ingredients except pumpkin leaves and oil and make a thick batter.

  2. 2

    Lightly grease the leaves with oil and pour some batter and cover it with another leave.

  3. 3

    Now grease the pan with oil and place one by one panki on it.flip and fry both side for 2-3minutes each.

  4. 4

    Open the leave carefully amd serve hot with chutney.
