Sweet and Sour Lemon Pickle

Wash the lemon thoroughly, pat dry with a clean cloth so that there is no moisture.
Or can keep for a few hours to dry it completely. - 2
Slit each lemon in 4 pieces like a flower without removing the bottom.

Take a glass jar, wash it thoroughly with hot water and dry it (Keep it in sunlight for 1-2 hours)

This is one of the most important steps while making any pickle as the jar should not contain any moisture.

Now take all lemons in a big steel bowl or thali.

Add Sugar and Salt over lemons.
Sprinkle ajwain, black salt, garam masala, red chilli powder, heeng and squeeze juice of two lemons.
Shake everything well so that all the Masalas will get incorporated well. - 7
Now can keep the pickle mix in the cleaned jar and cover it tightly.

Keep the jar in sun for 3-4 days. Leave it for another 4-5 days and don't forget to shake it everyday.

Always use a dry spoon and don't allow moisture to get in.
