Bún chả giò
Tired of rice? This noodle dish is super easy to make.
Steps

Dice the sweet potato, taro root, carrot, wood ear mushrooms, and glass noodles into small cubes.

Mix the ground pork with the diced vegetables, mushrooms, and noodles. Add salt, sugar, and a little cooking oil (I don’t use fish sauce here to keep the filling from getting watery when rolling the spring rolls).

Use rice paper wrappers (I usually use the type for bò bía rolls; it makes the spring rolls crispier and tastier).

Preheat the air fryer to 320°F (160°C) for 15-20 minutes. I really love this air fryer—it saves a lot of cooking time, doesn’t splatter oil, and is healthier since you use less oil when frying.

Arrange the spring rolls in the air fryer basket. Drizzle a little oil over them to make them crispier (I use 2 teaspoons of cooking oil for the batch shown below).

Serve the crispy spring rolls with rice vermicelli, fresh herbs, and sweet and sour fish sauce. Delicious, quick, and perfect for when you’re tired of rice!
