Ingredients

30-45 minutes
4-6 Servings
  • 4skinless boneless thighs, or whatever you have, cubed small
  • 1/2large onion diced
  • 4 clovesGarlic minced
  • I can whole kernel corn drained
  • 1corn can full of Frozen peas
  • 16 ozjar ragu double cheddar sauce + 3/4 ragu jar of half and half. You can use milk, broth, or water. Whatever you have
  • 4-6 ozsour cream
  • 1/2 bagwide egg noodles, uncooked
  • 1/2 lbcooked bacon crumbled small
  • Panko bread crumbs
  • Grated Parm
  • Chopped green onions
  • Salt pepper onion and garlic powders
  • Southern poultry seasoning (see picture)
  • Olive oil for browning chicken onions and garlic

Steps

30-45 minutes

    Preheat oven to 375. Spray casserole with nonstick spray.

  2. 2

    In a skillet, brown seasoned onions, garlic and chicken with the seasonings. While that’s happening, in a big bowl, add corn, peas, dry noodles, jar of sauce and sour cream and toss to coat. I season this too.

    When the chicken, onions and garlic are browned, add the liquid to the ragu jar, cover it and shake then pour into the chicken to deglaze the skillet. Turn off heat, stir, and pour into your big bowl and combine.

    Pour the whole mix into your pan or dish and cover with foil. If you need any more liquid at this point splash it over the top but it’s not a soupy consistency. Bake for 30-40 then pull it out and uncover.

    Sprinkle the entire top with panko bread crumbs then sprinkle with parm. I season the top a little then add the bacon bits. I used bacon we had the other day already cooked. Turn the oven to 400.

    Bake uncovered for about 15 mins more for the bacon to crisp. Sprinkle green onion over when it comes out and enjoy. Doesn’t really need to sit.

Im an old fashioned, old school cook and my recipes are basic. I change them up all the time.Since finding out I’m diabetic I’ve had to rearrange old habits. Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
