I am inspired by toddler tantrums... It's full of veggies... Best evening snack to serve... I made it for my 4years old munchkin... He liked it so much.

First boil the potatoes, mash them and keep aside. Chop the carrot and beans and cook it along with the peas until 90% done. Remove any excess water and keep aside.

Now heat the pan with 1 tablespoon oil, add ginger, garlic, onion and saute them.Until turns translucent.Turn off the flame.

Now to the onion mixture, add the mashed potatoes, cooked veggies,mint, jeera powder, garam masala, salt, food colour, amchur powder and bread crumbs.

Dip the bread slice in water, squeeze nicely until all of the excess water is removed. Add it to the mixing bowl. Now, mix all the ingredients until well combined taking care not to mash the veggies.

Now you should be able to make a pattie with this mixture. If your mixture is slightly sticky and if you unable to make a pattie, add a tablespoon of maida and mix well. Add more if needed.

Add 2 tablespoon all-purpose flour to a small bowl. Add sufficient water to make a flour paste and keep aside. Spread the bread crumbs in a plate for coating and keep aside.

Now heat a pan with oil for shallow frying and set flame to medium. While the oil is getting heated. Divide the mixture into equal sized balls according to your preference. Now dip the prepared balls in the flour paste and coat it with bread crumbs.

Slightly press it with your fingers and form it into a thick pattie. Turn the pattie and make sure that the other side of the pattie is also covered with bread crumbs.

Shallow fry the patties until both the sides of the cutlet turns golden brown by flipping. Once done remove it from the oil and place it in a paper towel to remove excess oil.

Serve it hot with ketchup and green chutney.
