Steps

For Paratha filling-

Boil and peel potatoes. Make sure potatoes are not overcooked as if they absorb more water they might become very loose and Paratha filling will come out of the dough. It's recommended to boil potatoes with the help of microwave instead of pressure cooker.

Now grate all the boiled potatoes with the help of a grater this process will ensure there are no big chunks of potatoes left.

Now in a pan heat oil and add finely chopped onions. Fry them till they shrink in size and ooze out all the water. Allow it to cool down and keep it aside.

Now in grated potatoes add grated ginger, grated garlic, chopped green chillies, chopped coriander leaves, fried onions, red chili powder, cumin powder, coriander powder, amchur powder and salt.

Give it a good mix and keep it aside. Paratha filling ready.

For Dough-

In a big bowl add wheat flour, salt and oil now start adding water slowly slowly and start kneading a very loose dough. Keep kneading by punch and fold method.

Apply some oil on the dough and allow the dough to rest for 20-30 mins.

After 30 mins again knead the dough by punching and folding method. Soft and loose dough for Paratha is ready.

For making paratha-

Heat a tawa, now take a small portion from dough apply some raw flour and with the help of your fingers make a Katori.

Now take 2- 3 spoons of potato filling and fill it in the dough. Seal the dough and start rolling round Paratha with the help of a roll pin. Apply raw flour in between to avoid the Paratha becoming sticky

Put your Paratha on hot tawa meanwhile roll another Paratha by filling the potato mixture. Flip the Paratha apply oil and increase the gas flame. Now flip it again and apply oil on the other side. The Parathas will start fluffing on the tawa. Similarly make all paranthas
