In a wok or frying pan heat olive oil over medium-high.

Add the onions and fry until soft and translucent.

Next add the garlic and fry again for about a minute or until fragrant.

Add the mangetout season with salt and pepper. Stir fry for 8-15 minutes depending how al dente you prefer your mangetout. I added a splash of water every now to stop it from burning.

Add the mint 5 minutes before removing pan from heat.

Serve immediately.
