Had this for lunch with fufu. My family and I enjoyed it.
Steps

Blend or grate ur pepper, onions and set aside. Soak ur stock fish in hot water to soften it a little, set aside as well.

In a pot, heat up palm oil, add little chopped onions, stir fry and add locust bean, ginger and thyme. Stir for a minutes or 2 and add the pepper.

Dissolve the melon in warm water to form a thick paste. Add it bit by bit into the pot, don't stir. Then cover to cook on low heat for 3 mins.

Add the chicken stock, stock fish, chicken and little seasoning. Stir to combine and cover to cook.

When its almost dried up, add the washed vegetables and cook for 3 mins or until done. Remove from heat and serve with any swallow of ur choice. Enjoy 👌😋.
