Fiber Soup with Meatball pieces of eight

When I make meatballs I usually make big batches and freeze, any I don't use. So I try to keep them on hand. If you don't have any or just have store bought that's fine. The same with the mushroom broth store bought will due just fine also. The star of this soup is fiber. This for those who need some tasty fiber in there diet.

Cooking Instructions

Slice the celery, on a bias thinly. Cut the meatballs into pieces of eighths. Add to a pot with the, rice, butter, and sauté for 6 minutes.

Stir in well.

Add the broth and bring to a boil. Add salt and pepper. Simmer 15 minutes. Slice the green onions thin.

Season the peas, mushrooms, and green onions with salt and pepper. Add the peas, mushrooms and green onions to the hot broth. Serve I hope you enjoy!

I had some leftover meatballs from my meatball pizza, so I thought I’d give this a try something different other than meatball subs or in a pasta... plus there’s is veggies in this for the kids.... good for soup and salad night (everyone seemed to like it and asked for me. I didn’t think this would be a hit in my house hold , but it was I had none left, I was surprised.)
