This recipe is very light with minimal oil,very healthy with loads of veggies and cottage cheese and green chillies and black pepper for extra zing.This is special as my mother likes light meals with veggies and she likes coconut milk.Served with brown rice.

Cut veggies carrot thin slices,French beans chopped in medium dices,peas.Cut medium sized red pepper, medium sized green pepper in dices,chopped onion.

Boil veggies in water for 14 min add salt.Cut onion in dices.Add 1 TSP coconut oil,add onion saute add both peppers.Add 1 tsp green chilli paste,1/2 tsp black pepper.Add salt to taste.Cover for 5 min.Add cottage cheese pieces.Make a slurry of 2 tsp cornflour with 1/2 cup water.Add 3/4 cup coconut milk.Cover and cook for 5 minutes.

Boil rice in open pan for 25 minutes,then sieve when cooked.

Serve hot with rice.
