I had some leftover grilled chicken breasts. I didn’t want to make a wrap. Didn’t want a salad. Just wanted something light.

Ingredients

15 Minutes
4 People
  1. 2Grilled Chicken Breasts
  2. 1Tomato
  3. 1/2 HeadGreen Leaf Lettuce
  4. 1/2Onion
  5. 2 clovesGarlic
  6. Black Pepper
  7. Salt
  8. Italian Seasonings
  9. 1/4 CupBalsamic Vinegar
  10. HandfulCrackers (Your Choice)

Cooking Instructions

15 Minutes
  1. 1

Prep meat and veggies while heating some olive oil in a pan.

  2. 2

Sauté onion and garlic for a couple minutes. Add in chicken and sauté a couple more minutes. Add in the tomato. (If you’re making this, I am assuming that you’ve already seasoned your chicken while grilling. Go light on the seasonings. The chicken will carry some flavor). Lightly season with salt, pepper and Italian seasonings. Add balsamic vinegar and continue cooking a couple minutes.

  3. 3

Lastly, add in the lettuce. Break up some crackers in a bag (or in your hand) to top with later.

  4. 4

    Plate and serve.
