Ingredients

1hr 15 minutes
8 slices
  • 250 gramsself raising flour
  • 60 mlmilk
  • 3eggs
  • 2 tspground spice
  • 3 dropsvanilla essence
  • 125 gramslight brown sugar
  • 1 tblspoon of strawberry jam
  • 350 gramsmixed fruit
  • 50 gramswalnuts chopped

Steps

1hr 15 minutes
  1. 1

    Mix all the ingredients except fruit and nuts in mixer till smooth. Then fold the fruit and nuts into mixture gently.

  2. 2

    Butter a 2pound loaf or round cake tin place mixture in tin and bake in centre of oven for 1hr 15 minutes at fan 150°test with skewer and leave for 10 minutes before removing.
