Pour 2 cups (about 480 ml) of water into a pot and bring it to a boil. Add 1 teaspoon oil, then add the washed rice. Cook until the rice is about 80% done, then drain the water.

In a separate pan, heat the ghee and lightly roast the cashews and almonds. Add the sugar and stir until it starts to melt, then pour in the milk.

When the milk comes to a boil, add a pinch of orange food coloring and mix well. Add the cooked rice, cover, and cook on low heat until the milk is fully absorbed. Turn off the heat.

Your Meetha Chawal is ready. Transfer to a bowl, garnish with chopped coconut, and serve.

Note: For best results, cook the rice ahead of time or a little earlier so it doesn't get mushy and stays fluffy.
